Quesadillas

Ingredients:

• 12 flour tortillas
• 3 cups grated cheese
• oil for frying
• salsa and guacamole, for topping (if desired)

Heat oil in a skillet over medium heat. Quickly place one tortilla in the oil, followed by 1/2 cup grated cheese evenly spread over the tortilla, and topped with a second tortilla. Cover the skillet and heat till cheese begins to melt and the bottom tortilla begins to brown. Flip the quesadilla over to brown the second tortilla. Make 5 more quesadillas with the remaining 10 tortillas. Cut quesadillas into quarters and place a dollop of guacamole followed by a bit of salsa in the center of each wedge to serve.
