Polvorones
(Crumb Cakes)
Ingredients:
- 3 1/2 cups + 1/3 cup of flour
- powdered sugar
- 4 egg yolks
- 1 teaspoon of grated lemon rind
- 1 3/4 cups of shortening
- 1 teaspoon of baking soda
- 1 3/4 cups of sugar

Mix the flour, the shortening, the baking soda, the sugar, the egg yolks, and the grated lemon rind in a bowl.

Knead with your fingertips to mix all the ingredients.

Spread the dough on a floured board and cut the dough with a round cutter or a glass to form circles.

Place in the oven pre-heated to 350 degrees, and bake until the dough is golden. Remove from the oven.

Sprinkle the cakes with powdered sugar while still warm.
