Mayan Jícama & Orange Salad

Ingredients:

• 2-3 cups jícama (peeled and cubed)
• 1 large can mandarin orange segments (no seeds)
• 4 fresh green onions (chives) finely chopped
• 2 TBSP fresh cilantro (chopped)

Mix the above ingredients with fork.

Add dressing:

• 1 TBSP lime juice
• 1 TBSP vegetable oil
• 2 TBSP plain yogurt
• pinch of salt

Mix the dressing with a fork. Add and toss it with the salad. CHILL in the refrigerator until served.
