Set oven to 350º
Caramel:
Place sugar in a pot at a medium heat and melt completely. Sugar should turn a brown caramel color. Place caramel in a Corning Ware or Pyrex making sure that the whole bottom is cover, you have to move quick before it cools.
Flan:
Place all 3 ingredients into a blender and blend till incorporated. (If adding coconut, wait until the end and just slightly pulse the coconut in.) Pour batter into Corning Ware or Pyrex with the caramel in the bottom.
To cook:
You will need to cook the flan in a double boiler in your oven. For this I suggest using a Turkey pan (included with most ovens) filled ½ to ¾ of the way with water. Place the Corning Ware or Pyrex in the pan with water in your oven. Cook for 35-40minutes. When done, flan should move like set Jell-o.
Remove from oven and loosen sides with knife. Cool on a wire rack and then flip over onto a serving platter so that caramel is on top.
