Chilled Gazpacho

Serves 2 - 4

Ingredients:

  • Seedless and peeled (skinless) tomatoes (2 cups)
  • 1 small medium baguette (soaked in water)
  • 2 garlic cloves (minced)
  • 1/2 cup of finely chopped onion
  • 1/2 cup of chopped cucumber
  • salt and pepper to taste
  • 1 TBSP olive oil
  • 1 small pimiento pepper chopped
  • 1 TBSP chopped cilantro
  • 1 cup wine vinegar

Blend all ingredients, then fill rest of blender with chilled water and blend again. Refrigerate.
