Albóndigas
(Meatballs)
Ingredients:
- 1.10 pounds of ground beef
- 1.10 pounds of ground pork
- 2 hard boiled eggs
- 4 tomatoes, roasted, ground and strained
- 2 tablespoons of grated bread
- 1 grated clove of garlic
- 1/2 onion, minced
- 1 spring of fresh parsley
- 1 level teaspoon of salt
- 1/2 teaspoon of pepper
- 1/2 cup of oil
- 1 glass of water

Place the meat in a container and add salt, pepper, the grated bread, and the minced garlic and onion. Mix thoroughly.

Peel the eggs and cut into very small pieces.

Roll the meat into small balls, putting a piece of eggs inside each meatball.

Put the oil in a pan and fry the ground tomato, salt and pepper.

Add the glass of water. When this boils, add the meatballs.

Add the parsley, cover and lower the heat. Leave until the meatballs are done.
